Around Granny's Kitchen: Anzac Biscuits are on Today's Menu.


ANZAC (the acronym for the WW1 Australian and New Zealand Army Corps) biscuits are a sweet biscuit popular in Australia and New Zealand. It has been suggested that the biscuit is a variation of Scottish oat cakes due to the Scottish influence in New Zealand. It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. Today, ANZAC Biscuits are manufactured commercially for retail sale and are popular in Australia and New Zealand.

Ingredients (to make around 35 biscuits):

3½oz / 85g / generous ½cup rolled oats

2½oz / 60oz / ½ cup dessicated coconut

4oz /125g / 1 cup plain flour

7oz / 200g / 1 cup sugar

2 tablespoons golden syrup

4oz / 110g / 1 stick butter

½teaspoon bicarbonate of soda

1 tablespoon water

Method:

Pre-heat the oven to 150C / 300F / Gas Mark 2. Mix together the oats, coconut, flour and sugar. Melt the syrup and butter together. Mix the bicarbonte of soda with with boiling water and add to melted butter and syrup. Add to dry ingredients and place a tablespoon of the mixture on a greased tray, allowing room for spreading. Bake in pre-heated oven at 150C / 300F / Gas Mark 2. for 20 minutes. Loosen from the tray while still warm and allow to cool on trays.
